The whole process of making tofu with tofu stone mill is commonly known as grinding tofu. Its traditional production process is as follows:
①碾片脱壳:将干黄豆分批倒进一台土砻中碾压,进行脱壳,并使黄豆碾压成片状;

②浸泡:使清水把已完成脱壳的黄豆片浸泡4~5个小时;

③磨豆浆:用人力转动一台豆腐石磨,将清水和黄豆片磨成豆浆,通常由2人操作,即一人不停地转动豆腐石磨,一人根据转速添加黄豆和水;

④过滤去渣:用一个密实的面粉袋装上豆浆,然后用力将浆液挤出流一只木桶;

⑤煮沸:将纯豆浆倒进一个大鼎,经煮沸后装进一个按比例配以石膏水的木桶里,并用一支木桨搅匀,然后让其冷却凝结;
⑤ Boiling: pour pure soybean milk into a tripod, boil it, put it into a wooden bucket with gypsum water in proportion, mix it well with a wooden paddle, and then let it cool and set;
⑥加压成形:取几块长约60×60×4厘米的槽形木板,板面呈方格状,并各垫上一块白布,然后用贝壳瓢将已凝结的豆腐花舀到几块木板槽里,用槽里的白布盖住,再压上一块木板和石头,令其减少含水量并成形。一个多小时后,搬开石头和木板并将其反转过来,除去白布,一板乳白色呈方格状的豆腐便新鲜出炉了。
⑥ Pressure forming: take several pieces about 60 long × sixty × 4 cm trough shaped wood board, the board surface is in a square shape, and each is padded with a piece of white cloth. Then, use a shell ladle to scoop the condensed tofu flowers into several board slots, cover them with the white cloth in the slot, and then press a board and stone to reduce the water content and form them. After more than an hour, remove the stones and boards and turn them around, remove the white cloth, and a plate of milky white checkered tofu will be fresh out of the oven.
